Fudge Brownie Muffin in a Mug - S

 
Let  me preface this by saying that I did not come up with this recipe. Cori White from the THM Saving Money Facebook page did. She took the effort to come up with this recipe and with her permission, I am sharing it for her.  

This is a hearty S snack, lunch or breakfast (for chocolate junkies). Do not eat this as a dessert after an S or E meal however. It is made in a 16 oz. mug or you can divide batter into TWO 8 ounce mugs.


Fudge Brownie Muffin in a Mug - S

1 egg or 1 Tbs egg powder
2 Tbs flaxseed meal
2 Tbs almond flour
2 Tbs Hershey cocoa
9 pkgs Truvia ( or 4-6 tsp with squirt of liquid Stevia)
1 dash each of salt, vanilla extract, almond extract
1Tbs unsweetened almond milk
1Tbs coconut oil or butter melted
a few tiny pieces of skinny chocolate (or Lilly's w/stevia) stirred into mixed batter

Microwave for 25 seconds and then stir. Microwave for one minute. Brownie should look gooey moist on top but firm to touch. ENJOY!
You can also bake this in the oven.  Bake at 350 degrees for 20-30 minutes in greased muffin tins.

Zevia All Natural Soda Review and Giveaway!

I am so excited about this giveaway because I know that a lot of you LOVE Zevia's all natural, zero calorie soda!  If you haven't had a chance to try it, now's the time!  I found Zevia on a trip to Whole Foods awhile back.  I was intrigued because the label said zero calories but there were no artificial sweeteners involved.  I had never heard of such a thing!  So, I bought a 6 pack to try and went home to research stevia, the sweetener they used.  I found that stevia has been used for years and has been proven to be safe.  And, I also found out that I loved the taste of Zevia!

This is an on-plan soda for us Trim Healthy Mamas.  Yay!  You've seen me posting coupons for this soda a LOT.  I get so excited when I can get my favorite drink at a discount!  You can find Zevia at most local grocery stores as well.  I buy mine every week at Kroger.

My favorite flavors are Dr. Zevia, Cherry Cola and Ginger Root Beer. I need to branch out and try more flavors as I'm sure they are all just as great. Another thing that I love about Zevia is that their soda has no high fructose corn syrup or artificial colors. Healthy Peach Cobbler - E

   
I am so excited about this peach cobbler.  It took me three times to perfect this recipe.  The first time I made it, I was winging it.  That wasn't a good idea.  I need direction.  So, I used Pioneer Woman, Ree Drummond's Recipe as inspiration.  Her recipe has sugar and flour in it so it does not work for Trim Healthy Mamas.  I was close the first time I tweaked her recipe and I got it right the very next time.  I am so happy with the result.  You cannot tell it's a healthy version of Peach Cobbler.  That was what I was going for. 



You will need oat fiber to make this Peach Cobbler.  I bought oat fiber after reading the Trim Healthy Mama book and then I forgot why.  I haven't used a recipe with it before so I was just hoping oat fiber would be what I needed to make this cobbler work.  It was!  Oat Fiber has zero net carbs, zero sugar, zero calories and zero fat. It definitely increases the fiber in foods so you don't want to consume a whole lot at once.  But, it works great to replace small amounts of flour in your recipes.  I'm definitely going to be experimenting with my oat fiber now that I know what it can do!

Healthy Peach Cobbler - E

Fruit:
1 pound peaches (about 4 to 5 large peaches)
1/3 cup Truvia
1/8 cup oat fiber
1 tablespoon lemon juice
pinch of sea salt

Preheat the oven to 400 degrees. In a bowl, combine all above ingredients and set aside.

Topping
3/4 cup old-fashioned oats, blended into a powder
1/4 cup oat fiber
1/4 cup Truvia 
1 1/2 tsp. aluminum free baking powder
1/2 tsp. cinnamon
pinch of salt 
1 tablespoon of butter, softened
1/4 cup unsweetened almond milk
1/8 cup + 1 tablespoon egg whites

Take 3/4 cup of old-fashioned oats and put in a blender.  Blend until oats turn into a powder - just a few seconds. In a separate bowl, combine the oats through salt.  Stir together.  Add the softened butter and cut together with a fork.  Add the almond milk and egg whites and stir until just combined.  

Pour the peaches into a small 8 x 6 baking dish.  Drop the dough on top of the fruit creating a cobbled texture.  Sprinkle additional Truvia over the top, if desired.  

Bake for 20 to 25 minutes or until golden brown and bubbly.  Allow to sit for 10 to 15 minutes before serving (if you can!) Serve with fat free Reddi-Whip or Tummy Tucking Ice Cream.

Makes 4-5 Servings

Homemade Strawberry Frozen Yogurt - FP


I've been trying to make chocolate frozen yogurt with no success.  I've given up on the chocolate and Greek yogurt combination.  So, until I find the perfect chocolate ice cream, I'm perfecting all of the other flavors I love.  This time it is Strawberry Frozen Yogurt and it is yummy!  It's super easy to make as well.  If you haven't invested in an ice cream maker, I highly suggest you do.  It is sooo worth it.  I bought a Cuisinart at Costco for $49.  That's a deal!

 I've seen recipes where you can heat the strawberries in a pan first but I chose the easiest route and blended it all together.  It works great and it's super quick!  


This recipe makes 4 to 5 servings or about 1 quart.


Strawberry Frozen Yogurt - FP

1 pound strawberries, rinsed, hulled and sliced
2/3 cup xylitol or  2/3 tsp. Stevia
1 Tbsp. lemon juice
1 tsp. vanilla
1/4 tsp. sea salt 
1 cup 0% Greek Yogurt
1/2 cup Unsweetened Almond Milk

Place everything into a blender and pulse until the strawberries are smooth.  Chill mixture for 1 hour or more and then transfer to your ice cream maker.  My Cuisinart takes 25 minutes.  
  
If you don’t have an ice cream machine: simply transfer the blended mixture to an airtight container, freeze, and stir well every half hour for 2-3 hours. 

You might also like Peanut Butter Frozen Yogurt or Blueberry Frozen Yogurt.
